😋😋😍😍My lunch today is looking a little something like this!Garlicky zucchini noodles, mushrooms 🍄 and tomatoes 🍅 sautéed in a little olive oil with two boiled eggs 🥚 and half an avocado 🥑 with sesame seeds. It was incredibly delicious.

To make the garlicky zucchini noodles with cherry tomatoes and mushrooms use a spiralizer to cut a medium sized zucchini into noodles (I used a plastic hand held spiralizer). Heat a pan with 1 tablespoon of avocado or olive oil on medium to medium high heat. Add 1 cup sliced baby bella or white button mushrooms to the heated oil and sauté for 3-4 minutes until they start to become golden. To the mushrooms add 1/2 cup cherry tomatoes and continue to sauté until the tomatoes start to blister adding another drizzle of oil if needed. When the mushrooms and tomatoes are cooked to your desired consistency add in the zucchini noodles tossing frequently for 2-3 minutes and season with 1/2 teaspoon of garlic powder, salt and pepper then immediately remove from heat to prevent further cooking so the zucchini doesn’t become soggy.
