Vegan fluffy lemon cupcake by bos.kitchen ❤These lil babes are gluten, dairy, nut, coconut and soya free! If lemon isn’t your factor, simply omit the lemon juice within the batter and buttercream for two tsp of vanilla extract! Joyful baking!!

Elements: (makes 14)
2 2/Three cup gluten free flour
1 cup sugar (you should use caster or icing sugar)
3/four tsp xanthan gum
2 tsp baking powder
2 tsp baking soda
half of cup dairy free, soy free butter, melted
2 cups rice milk
2 lemons, juiced and zested
1 tsp lemon extract

Lemon buttercream

four cups icing sugar
2 tsp lemon extract
2-Three tbsp rice milk

Preheat oven to 180•c and line cupcake tin with 12 liners. Put together cupcakes by including all dry elements to a big bowl. Combine along with a wood spoon. In a jug, combine melted butter, rice milk, lemon juice and zest and lemon extract. Add to the dry combine and stir properly to kind a batter. Fill cupcake instances 3/four full and bake for 25 minutes, till golden.
Put together buttercream by mixing butter and lemon extract with an electrical whisk or in a meals processor with a paddle attachment. Regularly add within the icing sugar, half a cup at a time. The combination must be easy and creamy, if not, add rice milk a tbsp at a time till desired consistency. Fill a piping bag and pipe on high of cooled cupcakes.
