Roasted Candy Potato and Chickpea Curry⁣⁣ by whollynourishedrd ❤.
For the potatoes:⁣⁣
2 medium candy potatoes, peeled and cubed (about 2 ½ cups)⁣⁣
2 tsp. coconut oil, melted⁣⁣
For the curry: ⁣⁣
1 tsp. olive oil⁣⁣
1 small onion, diced small⁣⁣
2 cloves of garlic⁣⁣
2 medium bell peppers (purple, orange or yellow), chopped into bite-sized items⁣⁣
2 Tbsp. thai purple curry paste⁣⁣
1 cup full-fat coconut milk⁣⁣
2 Tbsp. tamari or low sodium soy sauce⁣⁣
1 can chickpeas, rinsed and drained⁣⁣
½ cup water⁣⁣
½ lime⁣⁣ ⁣⁣
For the potatoes:⁣⁣
Preheat oven to 425 levels. Toss the candy potatoes with the melted coconut oil and unfold on a baking sheet lined with parchment. Sprinkle with salt. Roast for 20 minutes or till tender when pierced with a fork.⁣⁣
Warmth the olive oil in a big skillet. Add the onion and cook dinner for 3-Four minutes. Add within the garlic and peppers and cook dinner for 6-7 minutes till the peppers are beginning to soften.⁣⁣
Add the curry paste and stir round for a couple of minute till aromatic.⁣⁣
Pour within the coconut milk and soy sauce and stir to include.⁣⁣
