CREAMY SUNDRIED TOMATO & BASIL CAULIFLOWER GNOCCHI SKILLET from sara.haven ✨ I’m no Italian, however dio miooo this was good! ☺️💃🏼Crispy cauliflower gnocchi and rotisserie rooster are tossed in a creamy parmesan sauce with spinach and sundried tomatoes for a hearty, wholesome, 30-minute one-pan meal. We’re all about comfort right here, so this recipe requires frozen or boxed gnocchi (use your favourite!) and pre-roasted rooster (though be happy to cook dinner it your self you probably have additional time). 1 tbsp butter• four garlic cloves, chopped • 1.5 cups shredded rotisserie rooster or rooster breasts • 1 bag or field (12-16 oz) cauliflower gnocchi, cooked based on bundle instructions (I wish to pan-crisp it) • 1 1/four cup cashew cream or heavy cream • half cup Parmesan cheese • half cup rooster or vegetable broth broth • 5 ouncesjar sundried tomato strips in oil, drained • 2-Three cups recent spinach⠀

1) Soften butter in heavy skillet over medium-high warmth; add garlic and sauté 1-2 minutes, or till gentle and aromatic. 2) Add sundried tomatoes to the pan; stir. Add rooster broth and produce to a simmer, about 2-Three minutes. Add cream or cashew cream and simmer gently for a pair minutes, stirring often. 3) Stir in parmesan cheese. Add spinach and cook dinner till wilted. Stir in rooster and cooked/crisped gnocchi. Prepare dinner an extra 1-2 minutes and garnish with parsley and recent cracked pepper earlier than serving.
